Make Vegan Fluffy Pancakes!
I don't know about you but pancakes have always been one of my favorite breakfast food items. So, let's make vegan pancakes together! And, this is a beginner's recipe, it only takes 20 minutes and makes 8 pancakes! We are going to start off simple!
Let's get into it...
You will need these ingredients:
- Oat flour (1 & 1/2 cup)
- Baking powder (1 tablespoon)
- Sugar (organic) (2 teaspoons)
- Non-dairy milk (1 cup) *soy milk is my favorite
- Vanilla (2 teaspoons)
- Oil (1 tablespoon)
* If you would like, add in your favorite fruits like blueberries or bananas!
Time to put it all together!
1. Stir the oat flour, baking powder, and sugar together in a large bowl. (Avoid the electronic mixer, a spoon should do just fine!)
2. Once those three ingredients are stirred to your satisfaction, add the non-dairy milk, oil, and vanilla.
3. Stir until both wet and dry ingredients are blended with each other. (around 4 minutes)
4. Heat a non-stick pan at medium/low. If you do not have a non-stick pan, use some vegan butter to grease the pan up!
5. Scoop a 1/4 cup with pancake mix and place them on the pan. (I typically only do two at a time)
6. Cook until the top of the pancake begins to bubble and check to see if the bottom is becoming golden brown. (This should only take around 3-4 minutes)
7. Flip the pancake over to cook the other side. (This side typically takes around 1-2 minutes to fully cook)
8. Place the pancakes on a plate and let them cool!
* Add some vegan butter or syrup to your pancakes if desired!
